Wild Duck and Deer Sausage Gumbo

The best gumbo I’ve ever had!…

Ingredients

– 2 duck breasts, cooked and cut up

– 1 to 1 1/2 pounds of smoked deer sausage, cooked and cut up

– 2 cups chopped onion

– 1 cup chopped green pepper

– 1 cup chopped celery

– 2 tablespoons dried parsley

– 1 can (14½ ounce) stewed tomatoes

– 2 bay leaves

– 2 tablespoons Worcestershire sauce

– 1½ teaspoons pepper

– 1 teaspoon garlic salt

– 1 teaspoon dried thyme     

– ¼ teaspoon cayenne pepper

– 2/3 cup all-purpose flour

– 2 quarts water, divided throughout recipe

– 1 package Rice-A-Roni Wild Rice

Directions

Saute’ onion, green pepper and celery in 1 cup water.

Add 1 quart water, parsley, tomatoes, bay leaves, Worcestershire sauce, pepper, salt, thyme and cayenne pepper.

Add duck and deer sausage.

Add wild rice mix.

Cook until rice is done.

Mix flour with 3 cups water; add to gumbo.

Cook until thickened.

Remove bay leaves before serving.
