A wonderful, elegant way to serve a venison loin. Simple but delicious! (Serves 2 to 4 depending upon size of loin.)… Submitted by Mark W.
– 1 venison loin
– Medium sized onion (chopped)
– Cloves garlic (chopped)
– 6 mushrooms (chopped)
– 1 puff pastry
– 1/2 Cup gorgonzola cheese
– Olive oil
– 1 Tbsp. melted butter
Butterfly whole loin so that it is a flat slab of meat. Sear on a hot grill for approximately 1 minute each side.
Lay open the pastry dough and place seared venison on top. Top venison with onions, mushrooms and garlic that have been sauteed in olive oil until tender.
Top this mixture with gorgonzola cheese. Roll all of this in the puff pastry and seal the ends. Brush with melted butter and bake in 350 degree oven for 20 minutes.
Let wellington rest for 5 minutes before serving.
