Summary

Our own recipe for breakfast sausage. We make it very lean, so we use a pork loin that we grind ourselves for the pork. It's a favorite at deer camp , sausage gravy over biscuits...

Ingredients

- 6 lbs. ground venison
- 3 lbs. lean ground pork
- 3 Tbsp. salt
- ¼ tsp. ground red pepper
- ¼ tsp. red pepper flakes
- 1½ Tbsp. black pepper
- 1½ Tbsp. ground sage
- 1 tsp. anise seed
- 1 tsp. nutmeg
- 2 tsp. sugar

Directions

Mix well and pass through a grinder twice.
